Cutwater Distillery

Cutwater Distillery

The new Cutwater Spirits craft distillery, which is believed to be the largest distillery on the West Coast, was re-purposed from the skeleton of an existing tilt-up warehouse and attached wood office building. A glass-encased continuous exposed column still is the distillery’s focal point along with the sloping glass facade. The office portion of the project was turned into a kitchen and 2-story tasting room. The warehouse portion was re-purposed into a full production distillery and shipping facility. All distillery equipment was anchored and new mezzanines and offices were added for additional staff and storage capacity. The project includes an on-site grain mill, four 200-barrel tanks for whiskey and bourbon fermentation, four 200-barrel tanks for rum and a high-speed canning line.
